Algunos historiadores sostienen que las "inventoras" de los chiles en nogada fueron las Monjas Clarisas, pero otros defienden que fueron las Madres Contemplativas Agustinas del convento de Santa Mónica de Puebla, encargadas de elaborar un platillo que hiciera alegoría a la bandera del Ejército Trigarante, lo que dio como resultado el nacimiento gastronómico de los chiles en nogada, que pronto alcanzaron fama por que además de su exquisito sabor, llevaban los colores de la bandera del Ejército Trigarante.
